We smoked around 100 pounds of malt over Alder wood for our Up In Smoke smoked porter last week. Smoking ten pounds at a time, for an hour each batch, ensured that we reeked of smoke by the end of the day. And after two showers, yeah, still smokey. Hopefully this home smoked malt will be the magic touch. Up in Smoke won a silver medal at 2010’s Great American Beer Festival, and we’re sending it again this year with high hopes.
